材料:小黃瓜、味噌400g、細沙糖190g、米酒80cc、味霖20cc。

1.把小黃瓜用刀切去頭尾,再放灑上多量的鹽戳洗滾動,來洗掉小黃瓜特有的氣味,再用水沖洗瀝乾。
2.把味噌與細砂糖、味霖、米酒攪拌均勻即可,把剛瀝乾的小黃瓜放入塑膠袋中,把攪拌後的味噌醬倒入袋中,這樣就可以進行醃漬與發酵,放置冰箱約一天的時間後,這樣就完成今天教大家的醃漬物。

哇 老師&nbsp;<br>味增一定要用那麼多嗎&nbsp;<br>一罐500公克的味增 要用掉五分之四&nbsp;<br>嗚~有些心疼呢,我是買超市的比較高級的味增,一罐一百八。&nbsp;<br>看來最便宜的是小黃瓜~5條才二十塊。

I don't think a professional should use hands to mix the miso, especially in public video.&nbsp;<br>Hand gloves can help improve the quality of a food show. Please understand that the whole world is watching your show, not only in Taiwan.&nbsp;<br>&nbsp;<br>&nbsp;<br>

I don't using her hands to mix the&nbsp;<br>food is a problem All the chefs&nbsp;<br>doing cooking show on TV use&nbsp;<br>their bare hands. Check Jamie Oliver out. Don't be too fussy

Traditionaly we use hand without gloves to make preserved food; it always having different taste we call " Mom's taste". I really appreciate all the dishes that I learned from here.

watch food network. most of them use their bare hands when mixing or marinating meat. you gotta use your hands to really massage in the flavor. if you use a fork or a spoon, you can't massage the meat nearly as well. and watch Iron Chef, most of the world renowned chefs on that show use their bare hands all the time when handling food. don't be such a clean freak. the air you breath has more germs and bacteria than your washed hands.

The famous chef from UK - Jamie Oliver usually prepare his food withoud gloves on his TV show , squeeze the lemon juice or mix the salad by hand.

味霖是日本發明的調味酒 原料是甜糯米釀的甜酒再加清酒混合而成 有米酒去腥的功效 甜味則能突顯出食物的原味 又分本味醂 風味醂跟鹽味醂 買的時候建議買本味醂 還有別買到有"加料"的 比較不肖的商人都會加些有的沒的調味料 當然最安全的是自己釀 甜酒+烈酒就行了
